Gluten Free Cheese Blintz

These gluten-free cheese blintzes are soft, delicate, and filled with a lightly sweet, creamy cheese filling. The thin gluten-free crepes cook up tender and flexible, making them easy to fill and fold without tearing. Once pan-fried, the blintzes develop a golden, lightly crisp exterior that contrasts beautifully with the smooth, rich filling inside.

This recipe is perfect for breakfast, brunch, or even dessert. Serve them simply with powdered sugar or dress them up with fresh berries, fruit compote, or a drizzle of honey. They can also be prepared ahead of time and reheated, making them great for entertaining.


Ingredients

For the Crepes

  • 1 cup gluten-free all-purpose flour

  • 4 oz cream cheese, softened
    Creates a smooth, creamy texture in the filling.
  • 1 large egg yolk
    Adds richness and helps the filling set slightly when cooked.
  • 2 tablespoons sugar
    Lightly sweetens the filling without overpowering it.
  • 1/2 teaspoon vanilla extract
  • Zest of 1 lemon (optional)
    Adds brightness and a fresh flavor that pairs beautifully with the cheese.

Instructions

Step 1: Make the Crepe Batter

In a large mixing bowl, whisk together the gluten-free flour, sugar, and salt until evenly combined.

In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter or oil until smooth.

Gradually pour the wet ingredients into the dry ingredients, whisking continuously to prevent lumps. Mix until the batter is smooth and thin. The consistency should be similar to heavy cream. If the batter feels too thick, add 1โ€“2 tablespoons of milk until pourable.

Let the batter rest for 5 minutes. This allows the gluten-free flour to hydrate and improves the texture of the crepes.


Step 2: Cook the Crepes

Heat a small non-stick skillet or crepe pan over medium heat. Lightly grease with butter or oil.

Pour about 1/4 cup of batter into the center of the pan. Immediately tilt and swirl the pan so the batter spreads into a thin, even circle.

Cook for 1โ€“2 minutes, until the edges begin to lift and the bottom is lightly golden. Carefully flip the crepe and cook for another 30 seconds to 1 minute on the other side.

Transfer the cooked crepe to a plate. Repeat with the remaining batter, stacking the crepes on top of each other. Set aside.


Step 3: Prepare the Cheese Filling

In a medium bowl, combine the ricotta (or farmerโ€™s cheese), cream cheese, egg yolk, sugar, vanilla extract, and lemon zest if using.

Mix until smooth and creamy. If the mixture seems slightly lumpy, you can briefly mix it with a hand mixer for an extra-smooth filling.


Step 4: Assemble the Blintzes

Lay one crepe flat on a clean surface, cooked side facing up.

Spoon about 2 tablespoons of cheese filling into the center of the crepe.

Fold the left and right sides over the filling, then fold the bottom up and roll gently to form a neat, sealed package.

Repeat with the remaining crepes and filling.


Step 5: Cook the Blintzes

Heat a large skillet over medium heat and melt a small amount of butter.

Place the blintzes seam-side down in the skillet. Cook for 2โ€“3 minutes per side, turning carefully, until golden brown and lightly crisp on the outside.

Remove from the skillet and keep warm while cooking the remaining blintzes.


Step 6: Serve

Serve the blintzes warm with your favorite toppings. A dusting of powdered sugar, a spoonful of sour cream, or fresh berries all pair beautifully. For a sweeter finish, drizzle with honey or maple syrup.
